Fast And Easy Chicken Kiev
1 package boneless, thin chicken breast fillets
4 tablespoons margarine
1 teaspoon chopped chives
1/2 teaspoon tarragon
1/4 cup flour
1 egg
1 tablespoon water
1/2 cup dry bread crumbs
Hot cooked rice
Preheat oven to 400 degrees. Spread chicken breasts flat on work area and sprinkle with salt and pepper. Place 1 tablespoon margarine on center of each breast; top with 1/4 teaspoon chives and 1/8 teaspoon of tarragon. Fold chicken to enclose margarine completely. Beat together egg and water in small bowl. Coat chicken rolls with flour; dip into egg, then coat with bread crumbs. Place rolls, seam side up, in 9 by 13 inch baking pan. Bake for 20 minutes. Serve with rice.
Makes 4 servings.
