Eggplant Rolls With A Tasty Filling
2-1/4 pounds eggplants
11 ounces hard cheese
11 ounces cottage cheese
2 tablespoons sour cream
2 tablespoons mayonnaise
2 ounces bread crumbs
3-4 cloves garlic
Salt

Oil for frying
Cut eggplants lengthwise into thin slices, soak for 20 minutes in salted
water, pat dry with paper towels, fry in a small amount of oil and place on
paper towels to absorb excess oil. Combine cottage cheese, finely grated
hard cheese, mayonnaise, sour cream, crushed garlic, bread crumbs, salt and
herbs. Place 1 to 1-1/2 teaspoons of the mixture onto each eggplant slice
and roll up.
