4 eggs
2 tsp. dry sherry
1 Tbsp. soy sauce
Peanut oil
1/2 tsp. grated gingerroot
2-3 oz. cooked meat, turkey, chicken or ham cut in small strips
1 c. Napa cabbage, finely shredded or 1 c. bean sprouts
1/4 c. finely chopped mushrooms
1/4 c. finely minced onions or scallions
1/4 c. bamboo strips cut in matchsticks

Beat first 3 together and set aside. Heat a few Tbsp. oil over high heat. Add last 6 and stir fry until onion is translucent and cabbage is tender crisp. Stir mixture into eggs. Add a few more Tbsp. oil to skillet and heat. Ladle half of egg mixture into skillet and fry on both sides until set. Repeat with remaining.
