Edinburgh Tea Squares
1/2 c. shortening
1 c. brown sugar
1 c. sifted flour
1/2 tsp. salt
1 1/2 c. rolled oats
Filling:
1 c. pitted dates
1 c. water
1 Tbsp. lemon juice
Cream shortening. Slowly add sugar. Add next 3. Mix well. Spread half of mixture in well greased pan. Cook dates in water slowly until soft. Stir in lemon juice. Cool. Spread over base,. Cover with remaining dough. Bake at 350F 30-40 min. Cut in squares
