Easy Chicken Enchiladas with Yogurt Sauce
3 oz. cream cheese
2 c. chopped cooked chicken breast
12 oz. chunky salsa
1 c. shredded Mexican cheese blend
8 (6”) flour tortillas
Yogurt Sauce:
2 c. yogurt
1 c. chopped cilantro
1 tsp. ground cumin
Heat cream cheese in a large skillet over med. heat until soft. Stir in chicken and 1/2 c. salsa. Mix well. Add 1/2 c. cheese. Stir until melted. Spoon about 1/3 c. onto each tortilla and roll up. Place seam down in an 8x12” baking dish. Top with remaining salsa and cheese. Bake at 350F about 15 min. until heated through. Mix sauce ingredients and chill. Serve tortillas with sauce.
