Double Cheese Muffins With Garlic
8 ounces milk
3 tablespoons sour cream
4 tablespoons oil
1 egg
9-1/2 ounces flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
5-1/2 ounces coarsely grated hard cheese
5 green onions, finely chopped
2 cloves garlic, crushed
3-1/2 ounces Mozzarella, sliced
Heat the oven to 350 degrees. In a large bowl, combine milk, sour cream, egg
and oil. In another bowl, combine flour, salt and baking powder. Add flour
mixture to the liquid ingredients and stir just to combine, no need for
uniformity. Carefully mix in grated cheese, green onions and garlic. Coat
muffin cups with oil or line with paper liners. Fill muffin cups with batter
to 1/3 capacity. Place a slice of Mozzarella in the center of each muffin.
Top with remaining batter, filling muffin cups to capacity. Bake for 20-25
minutes. Cool in muffin cups for about 15 minutes, then remove from muffin
cups and cool completely on a rack.
