Christmas Mint Cookies

2 tbs sugar

1 sheet puff pastry

1/4 cup crushed peppermint candies

Sprinkle work surface with sugar, lay pastry on top. Roll pastry out to a 10" square, sprinkle pastry with peppermint candies. Fold opposite sides of pastry toward center so they meet in middle. Fold them again so two folds meet at middle. Then fold one half over other half as though closing a book, there will be 6 layers. Wrap in plastic wrap, chill 30 min. Heat oven to 375 degrees. Line a baking sheet with parchment. Slice folded pastry into 1/4" thick pieces. Arrange cut side up on baking sheet. Bake until light golden brown 15 min.
