Chocolate Mint Delights

Chocolate Mint Delights
2/3 cup butter
1 1/2 cups sugar
2 cups semi-sweet chocolate chips, melted
2 tablespoons light corn syrup
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup crushed peppermint candy
Preheat oven to 325 degrees. In bowl, combine butter and 3/4 cup sugar. Beat
with
mixer until fluffy. Add melted chocolate, corn syrup, egg and vanilla, stir
well.
Add flour, baking soda and salt, stir well. Stir in crushed peppermint
candy. Shape
dough into balls. Roll in remaining sugar. Place onto ungreased cookie
sheet. Bake
for 15 minutes. Allow to cool before serving.
