CHERRY GELATIN BARS

CHERRY GELATIN BARS

3/4 c. butter, melted
1 1/2 c. flour
1/2 c. cold water
1/2 c. chopped nuts
2 c. sugar
1/3 c. brown sugar
2 pkgs. Knox unflavored gelatin
1/2 c. chopped maraschino cherries
1/2 c. water
Flaked coconut

Mix butter, brown sugar and flour. Pat in a 9"x13" pan. Bake at 325 degrees
for 10 minutes. Cool. Dissolve gelatin in 1/2 cup water and set aside. Boil
sugar and water for 2 minutes and pour over the gelatin mixture in a large
mixing bowl. Beat constantly until very stiff (it will look like divinity).
Then fold in the cherries and nuts. Pour over the cooled crust and sprinkle
with flaked coconut. Cool and cut into bars. These also freeze well.
