Cheesy Rice & Veggies

You can serve this as a side dish, as I do, or as a main dish. Either
way, it's a winner!
3 c. prepared rice
10-oz. pkg. frozen corn
8-oz. pkg. shredded sharp Cheddar cheese
1/3 c. onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 c. milk
1/2 t. taco seasoning mix
1/2 t. salt
1/8 t. pepper
Garnish: paprika
Combine all ingredients except paprika in a large mixing bowl. Mix well
and pour into a greased 2-quart casserole dish. Sprinkle with paprika.
Bake at 350 degrees for 45 minutes, or until golden and bubbly on top.
Makes 6 to 8 servings.
