CARROT SUNSHINE SALAD From Julie

CARROT SUNSHINE SALAD From Julie

-----

4 to 6 c. grated carrots
2 to 3 c. crushed pineapple, lightly drained
1 c. raisins or dried fruit bits
1/2 to 3/4 c. Miracle Whip dressing
6 to 8 Tbsp. honey

Combine carrots, pineapple and raisins or mixed dried fruit. (Mixed fruit is
super). Mix well. Beat Miracle Whip and honey mixing well. Pour over other
ingredients. Stir well and chill. Let stand so all ingredients will blend
well.

If salad is a little tart, add a little more honey. If honey is not to your
taste or liking, use light brown sugar but the honey and salad dressing make
a delightful taste like butterscotch. This dressing goes well on all fruit
salads.

Note: Two cups finely chopped apple can be added as a variation.
