Brisket BBQ Poppers
Makes 24 poppers
12 jalapeno peppers
1 cup cream cheese, softened
1/2 cup grated Parmesan cheese
1 cup leftover brisket or steak, chopped
Black pepper and cayenne pepper to taste
24 thin slices cooked bacon
The bacon needs to be cooked but still pliable. Try using a one pound
package of precooked bacon to cut the preparation time. Cut the jalapeno
peppers in half. Remove all the seeds and veins. In a small bowl, add
the cream cheese, Parmesan cheese and brisket. Stir until well combined.
Season to taste with black pepper and cayenne pepper.
Spoon the mixture into each pepper half. Wrap a slice of bacon around
each pepper. Secure the bacon with a toothpick. Preheat the oven to
450°. Place the poppers on a baking sheet. Bake for 10-15 minutes or
until the poppers are hot and the cheese warm. Remove the poppers from
the oven and serve. Remove the toothpicks before serving.
You can grill the poppers over medium coals for 5-6 minutes for a great
smoky flavor.
