2 cups whole wheat flour

½ cup all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

2 cups buttermilk

½ cup molasses

1 cup raisins

1. Preheat oven to 350 degrees F. Spray an 8 x 4-inch loaf pan with cooking spray and set aside.

2. In a large bowl, sift together wheat flour, all-purpose flour, baking soda and salt. Gradually stir in the buttermilk and molasses, mixing just until

combined (do not over-mix). Fold in raisins.

3. Transfer batter to prepared pan. Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean. Remove from pan and transfer to

a wire rack to cool completely.

• Be careful not to over-mix the batter. Add the dry ingredients to the wet ingredients just until they’re combined. Too much mixing and the bread will

come out tough or dry. The key to keeping a quick bread moist is NOT over-mixing.

• For a less-dense bread, change the ratio of whole wheat flour and all-purpose flour. For instance, use 2 cups of all-purpose flour and just ½ cup of

whole wheat.

• Omit the raisins altogether, or use dried cranberries, chopped dates or currants instead.

• Add chopped nuts such as walnuts or pecans for a bit of crunch.

• Grease the loaf pan really well or spray with a

non-stick baking spray

so that the bread pops right out.

• The buttermilk is an important ingredient in this recipe. The lactic acid in the buttermilk reacts with the baking soda to form tiny bubbles of carbon

dioxide, which helps the bread rise. Don’t substitute with a different milk.
