BEST EVER TUNA SALAD SANDWICHES
2 3-ounce cans tuna in olive oil
1/4 heaping cup mayonnaise
1 small onion, finely diced
1 garlic clove, chopped
1 tomato, diced
2 hard-boiled eggs, chopped
4 slices bread
1 avocado
4 romaine lettuce leaves
1/2 tbsp extra virgin olive oil
Salt
Drain tuna and place in a large bowl, then add mayonnaise, onion, garlic,
tomato and eggs, season with salt and gently mix together until well
combined. Peel, pit and mash avocado. Lightly brush bread slices with extra
virgin olive oil and lightly toast in the oven for a couple of minutes.
Evenly divide the tuna salad over 2 toasted bread slices, top with avocado
and the lettuce leaves. Cover each sandwich with another toasted bread
slice.
