Baked Potato Wedges

Baked Potato Wedges
Prep time 15 minutes
Cooking time about 45 minutes
Serves 6
4 large baking potatoes each cut in to six wedges
2 1/2 tablespoons olive oil
salt and pepper
sweet Hungarian paprika
dried herbs to taste such as oregano thyme basil sage or marjoram
Preheat oven to 400 degrees F. Place the potato wedges in a bowl. Pour the
olive oil over them. Toss well to coat. Place the potatoes skin side down in
a shallow casserole dish. Sprinkle lightly with salt, pepper, paprika and
herbs. Bake 30 minutes. Turn potatoes over and season again with salt and
paprika and bake for another 5 minutes. Flip over again and bake 8 minutes
more or until the potatoes are well browned and tender threw out. Serve hot
with dipping sauce.
Dipping Sauce
1 cup sour cream
1/4 cup mild salsa
hot pepper to taste optional
