Amish Potato Salad

Amish Potato Salad​

Makes 6-8 servings
Prep Time: 30 minutes
Cooking Time: 20 minutes
Chilling Time: 4 hours for potatoes; 3-4 hours, or overnight, for completed salad

6 medium to large potatoes, unpeeled
4-6 hard-boiled eggs, grated
½ cup chopped celery
¼-½ cup chopped onion
Dressing:
1½ cups mayonnaise
¾ cup sugar
¼ cup milk
¹/8 cup vinegar
3 Tbsp. prepared mustard
2 tsp. salt
1. Boil potatoes until slightly soft, but not too soft. Drain.
2. Chill potatoes until completely cold, to make grating easier.
3. Peel. Grate cold potatoes into good-sized mixing bowl.
4. Gently fold in grated hard-boiled eggs and chopped celery and onions.
5. In a separate bowl, combine dressing ingredients and mix well.
6. Pour dressing over potato mixture. Stir to combine.
7. Cover. Chill 3-4 hours, or overnight, and then serve.
