Amish Fruit Bowl
1 teaspoon finely shredded orange peel
3/4 cup orange juice
2/3 cup sugar
1/4 cup lemon juice
1/4 teaspoon ground cinnamon
2 small oranges
1 cup chopped apple -- (about 1 apple)
2 cups cubed cantaloupe
15 1/2 ounces pineapple chunks (juice pack) -- drained
1 cup blueberries For Dressing, in a small saucepan combine orange
peel, orange juice, sugar, lemon juice, and
cinnamon. Bring mixture to boiling over medium-high
heat. Cook and stir about 1 minute or till sugar
dissolves. Remove from heat. Set aside to cool
slightly.Meanwhile, peel and section oranges over a bowl to catch
juices. Place orange sections in juice. To assemble,
layer apple, cantaloupe, pineapple, orange
sections and juice, and blueberries in a glass bowl. Pour
dressing over the top. Cover and chill for 3 hours. Toss before serving.
