Amish Carrot-Raisin Salad
Makes 4-5 servingsPrep Time: 20 minutes
2½ cups shredded carrots (approximately 3 large carrots)
½ cup chopped celery
½ cup raisins
½ cup mayonnaise
1 tsp. lemon juice
1. In medium bowl, mix together carrots, celery, and raisins.
2. In a small bowl, mix together mayonnaise and lemon juice.
3. Pour dressing over salad ingredients and mix together gently but well.
4. Cover. Refrigerate until ready to serve.
