Super Potato Casserole

Super Potato Casserole

Wendy Lee PaffenrothPine Island, NY

My sister gave me this recipe...her 6-year-old son loves it! Great alongside homemade meat loaf.

1/4 c. oil

5 potatoes, sliced

1/2 c. milk

1 c. shredded Cheddar cheese

1 c. corn flake cereal, crushed

Garnish: garlic powder

Place oil in a plastic bag; drop potato slices in bag, shaking to coat. Arrange potatoes in an ungreased 13"x9" glass baking dish; pour milk on top. In a separate bowl, mix cheese and cereal together; spread over potatoes. Cover; bake at 350 degrees for 30 to 45 minutes. Uncover and bake for 5 to 10 more minutes. Serves 6.
